Made with Passion

From Mediterranean bistro cuisine to the freshest seafood from the local markets, this cocktail will have you hurrying to book your next sailing trip! All these ingredients are available to buy at stores and markets in the BVI.

1 normal sized passion fruit (locally sourced)
45ml Jamaican Rum
15 ml Amaretto
30 ml fresh lime juice
10 ml vanilla syrup
10 ml cinnamon syrup

Start by mixing sugar and water and heating. Use 2 parts sugar to 1 part water. Stir over a low heat but do not let it boil. Add either cinnamon sticks or vanilla extract to create the syrup. We suggest two syrups, but you can use just one if you are busy snorkeling!

Add all these ingredients together:
Pulp of passion fruit, rum, amaretto, lime juice, vanilla syrup, cinnamon syrup.

Shake and strain over ice.

Garnish with the passion fruit shell. Enjoy at sunset while bobbing around on a mooring at your island of choice.

This recipe is brought to you by the owners of Brandywine Estates Restaurant on Tortola’s southern coast overlooking Sir Francis Drake Channel. Local insider’s tip: enjoy your cocktails in the beautiful gardens of Brandywine and try your hand at their Petanque Court, and you can overnight on a mooring (free if you have dinner) in Brandywine Bay, where you will find a dedicated dinghy dock just a short walk away from the restaurant. Happy sailing, happy cocktails!
